Galaxy Surprise Cake Recipe | Unplug and Unwind

Here is a fun and surprising galaxy cake recipe for you and the kids!

Equipment

  • Cake pop machine

If you don’t have a cake pop machine, you can use sphere moulds. Click here for a method on how to make the planets without a cake pop machine 

  • Four, 5-inch cake tins
  • Parchment paper
  • Electric whisk
  • Mixing bowl
  • Cake board

Ingredients

Cake

  • 1 Chocolate cake mix
  • Black gel food colouring
  • 1 Vanilla cake mix
  • 6- 7 Food colouring gels

Swiss Meringue Buttercream

  • 7x Egg whites
  • 400g Caster sugar
  • 228g Unsalted Butter
  • 1tsp Vanilla extract
  • Pinch of salt
  • Black gel food colouring

Method

Cake

  1. Mix the chocolate cake mix and add black gel food colouring, and put it to the side
  2. Mix your vanilla cake mix and split it into as many coloured portions as you like
  3. Create solid cake balls out of half the colourful cake mix. You can also make them with multiple colours by adding the cake mix in layers.
  4. Create circles for the bottom of the cake tins and mark two of them to differentiate the TOP and BOTTOM of the cake.
  5. Cut the cake balls in half, and in the two X-marked cake tins, place the cut side down onto the bottom of the pan, add some cake batter and add full cake balls on top.
  6. Cover the cake balls in batter
  7. In the other two cake tins, add cake batter to the bottom of the tin and randomly place the cake balls; bang the tins to release air bubbles.
  8. Bake according to the chocolate cake instructions or until a toothpick comes out clean
  9. Leave to cool

Swiss Meringue Buttercream

  1. Separate egg whites and whisk together over a bain-marie (mixing bowl over simmering water), continue whisking for 3-5 minutes or until the sugar has dissolved.
  2. Take off the heat and continue to whisk on a low setting until bubbles
  3. Mix at a medium-high pace until the bowl is room temperature, to get stiff and glossy peaks
  4. Add in room temperature butter and mix till there are no lumps

If making black food colouring for the filling, split the mixture and mix in until combined

Cake Assembly

  1. Place a cake with an X on a cake board, unlevelled side down
  2. Add some black buttercream as the filling, and repeat this step until the last X cake is on top with the non-levelled side face down.
  3. Add a crumb coat to lock in crumbs and refrigerate for at least 15 minutes
  4. Now decorate however you desire and enjoy!
